After the unusually low yields of the 2007 vintage, the 2007 vintage has an extraordinary aromatic intensity. The colour is a bright gold and the intense nose evokes candied fruit and nuts, accompanied by sweet spice notes. R.D. for 'Recently Disgorged' means that disgorgement has taken place less than one year before the commercial release, giving the wine a remarkable freshness and exceptional intensity, alongside the aromas of an old vintage, aged in the cellar for a long time. This is the boldness of R.D. and Madame Bollinger, who wanted to offer the world the experience of this tasting moment, considered at the time as 'the ultimate in French Champagne'. This stunning champagne pairs splendidly with the most refined dishes, such as pigeon cooked pink, or roasted scallops. Its intensity also makes a perfect marriage with aged Gruyère or Comté.
