Blend - Vinification
The Blanc de Blancs blend is 100% Chardonnay from various years (20-25% of which are wines reserved from the previous 2 years).
Provenance: A large majority of Premiers Crus from the Côte des Blancs and Montagne de Reims vineyards for aromatic refinement, supplemented by Sézannais wines known to provide maturity. Finally, several wines from the north of the Vesle valley give a light, fresh touch.

Tasting Notes
Vibrant and luminous in colour, the Blanc de Blancs is a beautiful, pale but golden tone of yellow with gentle green reflections. The persistent release of bubbles allows for an active effervescent quality.
At first, the Blanc de Blancs is very intense on the nose, offering fresh and citrussy fruit notes; this is followed by a refined floral nose with notes of white flowers and fruits (white peaches, pineapple).

Convivial and sparkling, this champagne pairs exceptionally well with seafood such as shellfish and whitefish. Ruinart's Blanc de Blancs loves the sea; a sea bass tartare with citrus fruits and ginger, or langoustines with fresh herbs are ideal starters to pair it with. A sole a la plancha would be a complementary main course, while an acidic dessert such as lemon tart or a grapefruit granita would truly highlight the fresh and citrus-rich notes of this elegant champagne.Additional Information
